25 Quick Breakfast Ideas

I am not a morning person at all. In fact I wish all jobs started at 9 the earliest and got done by 3pm the latest. Ok, I know I am dreaming but what I do try and have is a healthy breakfast ready for my kids before school: )

I usually get up early enough to make sure my kids eat well before they head to school. We rarely eat cereal for breakfast as it is mostly sugar and that will not help their brain stay focused during the day. I keep a list on my fridge of quick breakfast ideas or I get in a rut and forget what to make.

Here is a list of 25 healthy and quick breakfast ideas.

1) Yogurt Surprise. Add Vanilla Greek Yogurt to a bowl. Top with sliced strawberries, blueberries and sliced bananas. Top with granola and enjoy

2) Scrambled eggs, whole wheat toast with avocado mash (Mash 2 avocados, add salt, pepper and garlic powder. Mash together again and spread on toast) and serve with fresh fruit

3) PNB Tortilla: Spread peanut butter on one side of tortilla, add sliced bananas. Roll up and eat

4) Apple slices, cheese chunks and walnuts

5) Grapefruit with hard boiled eggs

6) Greek Vanilla Yogurt with blueberries mixed in and whole wheat toast. Could add shavings of dark chocolate for a yummy surprise

7) Cottage cheese, fresh fruit and whole wheat toast

8) Slice green peppers into thin slices, fry them in a skillet with melted butter. Flip once and let soften some on the second side. After about 2-3 minutes per side slowly crack an egg into the middle of the pepper slice. Add any seasoning you desire (I love to add Cavender’s All Purpose Greek Seasoning). After a couple minutes flip them over. Cook to desired consistency. Add shredded parmesan cheese on top

9) Slice an apple in half and scoop out core. Fill with PNB and top with granola

10) Waffles and fruit. Waffles can be made the day before and frozen individually. After they are frozen you can add them to a toaster to warm up before school. Serve with fresh fruit

11) Oatmeal. Add quick cooking oats to a microwavable bowl. Add sweetener of your choice (brown sugar, honey, raw sugar), and cinnamon (nutmeg optional). Add cold water and microwave for 55 seconds. Serve with fresh fruit or whole wheat toast

12) Hard boiled eggs, fresh fruit, bagel with cream cheese

13) Grilled blackberry sandwiches. Fry eggs to your preference, set aside. Fry turkey bacon and set aside. To make the sandwich heat panini press, add butter to both sides of bread. Spread blackberry jam to non buttered side of one slice, add egg then bacon and top with second slice of bread. Add to panini press and put top on to weight down. Flip when desired crispness and grill other side. Serve when done with a side of fresh fruit

14) Egg muffins. Beat 10 eggs, add 1/4 cup chopped green onions, add 1/2 cup leftover diced ham or bacon, 1/4 cup diced bell pepper, salt and pepper. Mix well and divide evenly into greased muffin tin. Bake for 20-25 minutes at 350 degrees F. Once cooled slightly you can eat immediately or cool completely and put in fridge. Warm up in the microwave before school the next day

15) Fig Newtons, grape tomatoes, kiwi

16) PB & J sandwich on whole wheat bread, apple slices, cheese stick

17) Cooked sausage links, hard boiled or scrambled eggs, grapes and bagel

18) Chicken salad with Triscuit’s and grapes

19) Hard boiled egg, cucumber slices, oranges

20) Smoothie (1- 1/4 cup orange juice, 1 banana, 1- 1/4 cup frozen berries of your choice, 1/2 cup vanilla Greek yogurt. Add to * Ninja blender in order and blend until smooth), whole wheat toast and scrambled eggs. *What I love about my Ninja Professional Countertop Blender is that it has individual cups for on the go servings. I can make these in the morning and bring a smoothie to work with me

21) Ham steak fried in skillet, scrambled eggs, strawberries

22) Granola bar (homemade are best), oranges, cheese stick

23) Fry diced potatoes with peppers in a skillet with butter. Add to bowl and top with fried egg. Serve with fresh fruit

24) Breakfast burritos. Cook scrambled eggs to your desired consistency. Add cooked crumbled bacon or diced ham to pan until warm. Top middle of tortilla shell with eggs, bacon or ham, shredded cheese, green onion or chives, salsa and/or sour cream. Roll into a burrito and serve with strawberries. These can be made ahead, rolled up into burrito and wrapped in wax paper and put in fridge. When ready to eat, leave wrapped in wax paper and microwave for 1-2 minutes until warm in the center

25) Sliced and cooked sausage such as kielbasa, chicken sausage with apples, etc. Serve with eggs cooked as desired, cheese cubes and grape tomatoes.

It is important for us to eat healthy so we are not focusing on our empty growling stomach and our brain is not tired from too much sugar.
